It is the beginning of May and we are on the verge of summer. Temperatures climb into the 80s, and it’s hard not to get dizzy when thinking of the Summer: upcoming trips to the beach, popsicles, sunsuits, and, of course, barbecues. Summer Grilling is one of Summer’s best delight and few things are as good as a good burger by the pool, or some grilled sardines with bread right next to the seaside.

A Summer favorite in Brazil, Portugal, and Spain alike is churrasco: pork (or sometimes beef) ribs grilled on top of some charcoal, seasoned only with thick flakes of sea salt, and often eaten with bread, potatoes, or a salad.

Some opt to have it with grilled sausage or grilled chorizo and to spice up the dish with some spicy hot sauce called “Piri Piri” for the Portuguese, or “chimichurri” for the Spanish. Best eaten al fresco, under the Sun!
